Enzyme
Class of protein compounds produced by a living organism which acts as a catalyst capable of accelerating or producing biochemical changes. Also referred to as organic catalysts; they are not consumed in the reactions they catalyze but are regenerated at the end of such reactions. In the food and drug industries they are referred to as proteases (proteolytic), amylases, lipases, and pectinase. In topical skin care, an enzyme such as papain (papaya) and bromelain (pineapple) dissolve the build-up of keratinezed cells at the skin's surface.
